Jacket Potato with Tuna and Sweetcorn Filling

Hi all, Browsing through Easter holiday pictures made me crave for jacket potato as I didn't have a chance to eat it when I was in Granada. So, I decided to make it myself today and I'm sharing the recipe here. What you need: Potato 1 can of tuna in brine 1 can of sweetcorn Mayonnaise Olive oil Salt Pepper Chilli Flake (optional) Spring Onion (optional) Preparations:   Potatoes Wash the potatoes thoroughly Washed potatoes Poke holes with fork Rub oil around each potato Sprinkle salt and pepper Ready to bake Bake the potatoes at 180deg for 1 hour and 10 minutes  Tuna and sweetcorn filling Remove the water from tuna and sweetcorn  Mix the tuna and sweet corn in a bowl Tuna and sweetcorn in a bowl Add mayonnaise, chilli flake and spring onion Put everything in a bowl Seasoned with salt and pepper  Filling is ready Mix well Serve with the baked potatoes while its hot. ... Masak Gulai Tempoyak (Durian Paste Soup)

Salam all, It's been a while since I post a new recipe on this blog. Well, today I feel like sharing a new recipe on this site. So the recipe that I'll be sharing today is a Malaysian dish which the specialty dish of a state in Malaysia called Pahang. This dish is "Gulai Masak Tempoyak" or if you translate it to English it is Durian Paste Soup (I think I literately translate it). Ingredients: Durian paste (My mum brought it over when she came to visit. You can Google how to make it using Durian flesh) Tumeric powder Fresh Chillies (sliced at the bottom) Cucumber(cut) Salt Meat of choice (I usually cook fish. I've decided to put my chef hat on today and share with you my chocolate brownie recipe that I've been using since my undergrad days. I'm baking tonight to bring to the potluck lunch that my colleagues have organized for me and they have requested for me to bake for them so here it is. Ingredients 85g baking chocolate 1/2 cup butter 1 cup sugar (I usually only use 3/4 cup sugar) a pinch of salt 2 eggs 1 tsp vanilla extract 3/4 cup flour 3/4 cup chocolate chip and nuts The ingredients Procedure 1. Combine butter and baking chocolate until both of them melt 2. Add sugar and salt. Mix. 3. Add egg one by one and vanilla extract. Stir until the mixture is homogenous. 4. Sprinkle flour slowly into the mixture. 5. Add chocolate chips and nuts into the the mixture and mix. 6. Pour the mixture into a baking tray and bake at 180 deg C for 30-45 mins. 7. Oreo Cheesecake

I was supposed to burn some calories today but decided to gain calories instead. I ditched SCKLM this morning because I was too tired to wake up early morning and baked this instead. I Googled the recipe online and since I was a bit lazy, decided to make unbaked oreo cheesecake. What you need for this cake are: 3 packets of oreo (or similar generic brands) 1/4 cup of melted butter  250ml of thick cream 250g of cream cheese 1 teaspoon of vanilla essence 1/2 cup of sugar 1. crush 20 Oreos into crumbs 2. Combine Oreo crumbs (for crust) with melted butter. 3. Press into the bottom and halfway up the sides of a baking pan. Set in refrigerator to firm.  4. Whipped the thick cream until its fluffy.  5. Mix cream cheese, sugar and vanilla together in a large bowl until smooth and well combined. 6. Gently stir in whipped cream. 7. My friends here in Brisbane know my obsession with kitchen stuffs and recently I got myself a new toy in the kitchen. It was second hand but the previous owner hasn't used it so you can say it's quite new and I did get it for a good deal. Want to know what's my new toy? TADAAAA!!!  milkshake maker Yes, I got myself a milkshake maker. Now, I don't need to spend $5++ for a milkshake anymore. All I need is just half cup of milk and few scoops of ice cream, pop it in the cup and mix. Then WALLA... The milkshake is ready to consume and it even comes with colourful curly straws.

Couple of days ago I was craving for tiramisu. As there is no 'halal' tiramisu here, I decided to make one. This is actually my first attempt to make this cake, luckily it turned out well in the end though it doesn't look as good as the one in the pic below: Here, I would like to share the recipe with my readers. First of all for the ingredients, all you need are: 2 packets of sponge finger 150g of sugar 250g of cream cheese 250g of pure cream 3 tbs of coffee dissolved in hot water the ingredients 1. Beat sugar, cream cheese and pure cream in a mixing bowl until soft peaks form (sampai kembang) 2. Dip the sponge finger into cooled coffee and arrange it on a tray. Tip: don't dip the sponge finger too long or else it will be soggy. 3. Pour half of the cream cheese pure cream mixture on top of the dipped sponge finger and spread it out evenly. 4.
